Hailing from Trapani, Sicily, these early harvest olives are cured for just 10 days using the Castelvetrano method (named after the Sicilian town which developed it). It is a natural process that means that they retain their vivid lush green colour and firm al dente texture. A beautiful olive.

I was surprised at the size and quality of the green olives, however, while showing them to a colleague the bottom of the container split and 50% of the brine was lost. I recommend the exporter reviews the packaging of the product. Nevertheless, I will reorder the olives without fear if I have a suitable container to hand.
