Butter beans are large, creamy-coloured beans that have a soft, floury texture when cooked. They make a great vegetarian pâté and work well in mixed bean salads, or rich, wintry stews. They are also a useful source of potassium.

The beans are much smaller than I have always used and the "best before" date was end of April 2020!!
However, I have used them in a veg soup and they are fine.
Be sure to soak them overnight and then cook until soft, for a very tasty addition to a casserole or dish in its own right. As a vegetarian, I eat beans in plenty, and these are some of my favourites.
