Whether you class Vanilla as a fruit or a spice, it it truly one of any chefs best friends in the kitchen, so pungent in smell and taste, mostly used in desserts but can also be used in savoury dishes too, add to mashed potatoes along with olive oil instead of butter & some chopped soft herbs like parsley or coriander, or drop some into a nut brown butter to spoon over simply grilled white fish, but however you use it, remember to place any leftover pod into your sugar jar to infuse and give you the best flavoured sugar for baking you'll ever need.
