This is a lean air dried beef whole muscle (Silverside usually) from dry aged cows. Traditional Italian methods of salting the meat make this one of our facourite salamis!
Eat this on a plate with salad and dressing, wrapped round some soft cheese or on a pizza with rocket.

Very good flavour. It was probably sacrilege but we had it for lunch with Charentais melon. Superb. Delivery packaging etc also 1st rate. Thanks
