This a wonderful handcrafted cheese, naturally smoked over oak chips at the Wensleydale Creamery, in the heart of the Yorkshire Dales.
This cheese is excellent, with a deep, smoked flavour and a good texture for slicing or crumbling. Great in sandwiches and cheese sauces with cauliflower and broccoli.
This is exactly what I want in a smoked cheese, with the smokiness perfectly complementing the natural flavour of the cheese, and the texture is spot on. My friend was more than happy to take a chunk. As I'm the only cheese eater in our house, I may let her have another chunk if there's any left when I next see her......
If you like smoked cheese, but don't want it to taste unnatural or processed, this is great! Goes well as part of a tapas type picnic, but also I think would be lovely with a strong red rioja!
It’s a big quantity but a great price and a delicious cheese! My tip (given to me by a cheese monger) - I cut it into 200g pieces, wrap in foil and freeze. Defrost in the foil when I am ready to eat the next piece. It keeps its flavour and texture despite freezing.
