Satay Chicken Dinner
This is a beautiful Satay Chicken, along with a pineapple salsa and some coconut flatbreads!
Satay Chicken, Pineapple Salsa and Coconut Flatbreads

For the Coconut Flatbreads
Mix the Flour and 400ml coconut milk, season with salt and pepper. Knead into a dough and then seperate into balls. Place on a baking tray and allow to rest for at least 2 hours.
For the Satay Sauce
In a bowl mix the peanut butter with 400ml of coconut milk and grate in the ginger.
add the chopped garlic, honey, curry powder, soy sauce, and the zest and juice of two limes.
Pour half of the mixture on top of the Chicken Thighs and leave to marinade.
For the Pineapple Salsa
chop the pineapple into chunks, add the onion, coriander, chilli and the juice of two limes to a bowl.
Take the chicken out from the fridge, pour a little oil on top of the marinade and place in a hot barbecue. Continue to move so that it doesnt get stuck on the grill, turn after around 8 minutes.
In a frying pan, add oil and when hot, cook the flatbreads, pressing down as they cook in the pan.
Chop up some spring onions and plate up!
