Salmon, Asparagus and Mushroom Dinner

Salmon, Asparagus and Mushroom Creation
Marinade the Salmon
Put the salmon fillets into a container along with the soy sauce and maple syrup, leave in the fridge for at least an hour to marinade.
Cooking the Salmon
Heat a pan to a high heat and add oil, once hot, add the salmon. After the salmon skin has crisped up underneath, flip the salmon over and cook for 2-3 additional minutes, set aside in the oven on a low tempreature.
In Another Pan
Add butter to a seperate pan, once melted, add the mushrooms and cook till softened.
Once the mushrooms are cooked, add the asparagus and cook for 1-2 minutes.
Add the carrot strips, broad beans, peas and a tablespoon of soy sauce. Season and cook for a further 2 minutes.
For the Glaze
In a seperate pan, heat 15ml of soy sauce and the same amount of maple syrup in a pan till reduced down and warm.
Set the vegetable mix on a dish.
Remove the Salmon from the oven, take off the skin and add on top of the vegetables.
Add the cockles to the glaze, and pour on top of the dish. Enjoy!
